Pumpkin Cookies Recipe

This is a great pumpkin cookies recipe that my Mom used to make. Now the key is the frosting. The cookies will be very dry without it. It has taken me several tries to get the frosting just right. The mixture must be cooled but if you cool it too much it will become too thick. Also do not store in an air tight container or the cookies will become soggy and wet. Yuck!

Make your frosting first:

1 cup powdered sugar
1/2 cup brown sugar
4 tsp milk
3/4 tsp vanilla
3 tbl butter

cook butter, milk and brown sugar until dissolved. COOL add powdered sugar and vanilla and mix with your Kitchen Aid until very creamy. The frosting should be the consistency of peanut butter. Spread on warm cookies

Now for the batter:

1 cup oleo
2 cups sugar
2 cups pumpkin
2 eggs
4 cups flour
2 tsp soda
2 tsp cinnamon
2 tsp salt

Cream oleo, sugar, pumpkin, and eggs mix well. Add dry ingredients. Drop onto greased cookie sheet. Bake at 375 degree for 10 to 12 minutes. I have noticed that in my oven these cookies take about five minutes longer to bake.



Now the last batch of cookies I allowed the frosting mixture to cool too much and it was very thick when I put in on the cookies. I also waited too long to spread it on the cookies and they had cooled and it didn't melt the frosting. They were still extremely tasty and the frosting was soft and didn't harden.
