Pumpkin Cookies.

This is a great pumpkin cookies recipe that my Mom used to make. Now the key is the frosting. The cookies will be very dry without it. Also do not store in an air tight container or the cookies will become soggy and wet. Yuck!

Make your frosting first:

2 cups powdered sugar
1/2 cup brown sugar
4 tsp milk
3/4 tsp vanilla
3 tbl butter

cook butter, milk and brown sugar until dissolved. COOL add powdered sugar and vanilla. The frosting should be the consistency of peanut butter. Spread on warm cookies

Now for the batter:

1 cup oleo
2 cups sugar
2 cups pumpkin
2 eggs
4 cups flour
2 tsp soda
2 tsp cinnamon
2 tsp salt

Cream oleo, sugar, pumpkin, and eggs mix well. Add dry ingredients. Drop onto greased cookie sheet. Bake at 375 degree for 10 to 12 minutes.
