We are not big on carving pumpkins but when we went to Hanafords the other day they were practically giving pumpkins away. CAL bought a huge one and is carving it right now. I have never roasted pumpkin seeds before so I will pass this time. I will have to talk to WB to find out how she does it. I love sunflower seeds and have had pumpkin before but.... Do you eat the entire shell or what?

I've never toasted pumpkin seeds and can't remember the last time I even ate any... so... good question! ;)
we marinate them in a very salty brine for a few days. Then spread them evenly in a cookie sheet. Bake with butter and sprinkle more seasonings on them as they bake.
hubby handles the baking.
we eat them shell and all if they're crispy and salty enough.
